Morita is type of chipotle – smoked jalapeño – but smoked shorter time. Rating 2,500-8,000 SHU matches jalapeño heat. The shorter smoking time preserves fruity flavor and creates purple-red color. Less dried than meco chipotle, more pliable. The flavor is smokier than fresh jalapeño, fruitier than heavily-smoked meco chipotle. Essential in certain regional Mexican sauces. Can be used like chipotle. The purplish color is distinctive. More expensive than regular chipotle due to shorter smoking time.
