About This Pepper
Chipotle Peppers are actually smoked and dried ripe jalapeño peppers. The name comes from Nahuatl word ‘chilpoctli’ meaning ‘smoked chili.’ With same heat level as jalapeños (2,500-8,000 SHU), chipotles offer completely different flavor profile – deep, smoky, and sweet. Red-ripe jalapeños are slowly smoked over wood fire for several days until dried. Most commonly found canned in adobo sauce (tangy tomato sauce), chipotles add smoky depth to BBQ sauces, marinades, salsas, and countless dishes. Two main types are morita (less smoked, purplish) and meco (very smoked, grayish).
