About This Pepper
NuMex Sandia is New Mexico variety developed specifically for red chile production. Rating 5,000-7,000 SHU, it’s hotter than many New Mexico varieties. The name ‘Sandia’ refers to Sandia Mountains near Albuquerque. Excellent for making red chile sauce and powder. Dries well for ristras (decorative pepper strings). The heat level is perfect for authentic New Mexico red chile. Developed by New Mexico State University. Very productive plants. Essential for New Mexican cuisine. The dried pods have excellent color and flavor.
