About This Pepper
The Ghost Pepper (Bhut Jolokia) was first pepper to break 1 million SHU, rating 855,000-1,041,427 SHU. Native to Northeast India (Assam, Nagaland, Manipur), it was once world’s hottest pepper (2007-2010). The name ‘bhut’ means ‘ghost’ – possibly referring to intense heat that ‘sneaks up’ on you. Despite extreme heat, ghost peppers have sweet, fruity flavor with slight smokiness. Used sparingly in Indian curries and chutneys. The thin, wrinkled skin and extreme heat make it popular for hot sauce production. Multiple color varieties exist.
